deep and fruit-saturated, with passionfruit candy at the centre. raspberry and red grape bring vivid, juicy sweetness, while red wine adds plush, vinous depth. cacao nibs and caramel carry the cup with structure and richness, giving a layered, expressive anaerobic natural with a long, fruit-forward finish.

whole F1 Esperanza cherries are floated for sorting and washed in fresh water before being placed in stainless steel tanks fitted with a one-way air valve. mossto from previous coffee fermentations is added to the tank, bringing additional yeasts and bacteria that help kick-start fermentation and build complexity. the mossto and cherries work together to push oxygen out within one to two hours, creating an anaerobic environment. after 24 hours of fermentation, the cherries are washed again, then dried for two days on ceramic patio before finishing on layered beds inside a solar dryer.
