Process Hydro-Natural
an expressive yet remarkably composed geisha with layered florals and refined juicy sweetness. soft apricot opens the cup before magnolia blossom and white grape carry through a long, sweet finish. compared to the harrar, the profile feels broader and more textural, with fermentation adding depth and softness while preserving the geisha’s delicate structure.
despite the more experimental processing, the cup remains exceptionally clean and poised. sweetness builds gently rather than intensely, allowing the florals and acidity to stay articulate throughout.
process hydro-natural
ripe cherries are harvested and rested before beginning a carefully controlled hydro-natural process designed to combine the fruit complexity of a natural with the clean finish of a washed coffee. after initial drying, the cherries undergo an overnight water soak before depulping and washing, helping preserve clarity while enhancing tartaric acidity and layered fruit character.
drying continues slowly under a combination of direct sun and shade-net drying to stabilise sweetness and structure, producing a cup that feels expressive, floral and remarkably clean.
