Simon Brown named his farm “Las Etíopes” as a nod to his deep admiration for Ethiopian coffee. his path is unusual: after years in the UK coffee industry, he moved to Peru with his wife and purchased the farm in 2019. he’s been profiled for advocating direct sales to local roasters - a model that can help buffer producers from C-market volatility. this washed heirloom shows his craft and precision - aiming for varietal purity, structure, and an unadorned expression of place.

Process - Traditional washed

fully ripe cherries are hand-picked and floated to remove low-density fruit, then depulped the same day. mucilage is removed through a cool, controlled fermentation before thorough washing and density separation. coffee is dried slowly on raised beds for 12 hours, and once that time is up, it is moved to covered patios for a further 15-18 days (depending on weather). during this, coffee is turned frequently for even moisture and rested to stability prior to export.
