plush and expressive, with blackberry sweetness at the centre. red grape and red wine bring a deep, vinous fruit character, lifted by juicy lemon and lime and a delicate thread of coffee blossom. vivid, floral, and fruit-saturated, with elegant anaerobic-natural complexity.

whole cherries are floated and washed with fresh water, then transferred intact into a sealed tank fitted with an air valve. fermentation begins naturally with the yeasts and microorganisms present on the cherries, gradually expelling oxygen and creating an anaerobic environment for controlled fermentation. once complete, the cherries are rinsed again with clean water, then dried first on a ceramic patio before finishing on layered beds inside a solar dryer.

this single-farm lot comes from Bette Buna’s farm in Megadu woreda, in Ethiopia’s Guji zone. the farm Bette Buna was founded by Dawit and Hester and now operates farms across Guji, Yirgacheffe, Sidama, and Bench Maji, while also working with allied farmers. the Megadu farm spans 220 hectares of semi-forest and wild forest, with a team of full-time and seasonal employees responsible for harvesting, sorting, and processing each lot.
